Basing myself on the Micro Machines toys, and assuming this is indeed a virtual version of an existing toy piece, this could either be:

No wonder it's unclear what this one is! The front part of the sprite is exactly the same (with some color swaps for the headlights) as this other car: www.igcd.net/vehicle.php?id=6553

The windows make me think this specific one might be the Jaguar E-Type Convertible, though: m2museum.com/Cars/Jaguar/Jaguar.htm

Basing myself on the Micro Machines toys and assuming this one is indeed a virtual version of an existing toy, this can then only be this Trike (from this page: m2museum.com/Motorcycles/Motorcycles.htm) because it's the only Trike that exists in the entire Micro Machines toys line.

Even though the image in the Car & Track selection screen is based on various Group C Race cars. My wild guest on the in-game sprite would be a generic 90s grand tourer-based sports racing car (i.e BPR Global GT Series) due to having a large spoiler. In short, it's a 'Made for Game'.
