At the end of the movie it says that the GT40 is the only AMERICAN car to win the Le Mans, and throughout the movie it's made very clear that they want to win with an american car.

All Ford GT40 Mk I, II & III's were designed and built by Ford of Britain. Only the MK IV GT40 was created in the US.
