You can customize your FC to perfectly resemble Ryosuke's as long as you pick the right tuning course and have the right tuning cards. And if your car is fully tuned, you can revert the mirrors back to their original appearance and back to Ryosuke's custom mirrors if you have at least two wing mirror cards. The only thing that stays is the bumper kit. Hence why you cannot use a front bumper/side skirt/rear bumper card even if your car is fully tuned. You can still change the car's hood and rear wing, though. That, and you also can't remove stickers from your tuned car. Long story short, you CAN play as the boss cars if you pick the right tuning course and have the appropriate dress up and tuning cards (just as I did with Kyoko's FD, which was my starter car).
